Agriculture and/or food service majors, dark chocolate question!

Just how many tons of dark chocolate does Ghiradelli and, other manufacturers process at one time and why is it done like that? For six months to a year their 86% cacao has been dated 9/30/19. This at any grocery store in the US (at least four states that I'm aware of!). Thank you!
