Of course college ball and the NFL are now completely different games. The defensive speed, athleticism, physicality and coaching intelligence in the NFL is such that no QB can get away for long with the stuff college QBs routinely do - ask RG3, Manziel, V. Young, Kaepernick, Tebow, even Vick. Cardale Jones looks like a man among boys, but in the NFL they all look like men.

Because the college game is *different* from the pro game. If the college game were merely the AAA league for the NFL, then you play a pro offense. But it isn't (except in the minds of the NFL). You do what it takes to win--and with large rosters you may will have more than one good QB to run that offense. In the NFL you only have 53 man rosters. You cannot afford to get your QB hit on most plays. In college you can. There's always a "next man up".
 
QBs can't read defenses because coaches have taken their need to do so away from them. Hell, even most pro QBs have coaches in their ear (literally) pre-snap telling them what they need to do...even MORE SO in New England. It's an over-managed game now, which is why many of today's "greats" wouldn't have survived in another era.

The one scheme that is extremely successful in college right now - including at tO$U, F$U, Oregon,.... is the "Read Option" QB and being the "bread & butter" staple play of these offenses (take a look at the massive yardage gained and # of TDs scored the QB Draw off the "read option" got tO$U against VaTech's hyper-aggressive, blitz-happy defense.

Here's the thing, you cannot really use a "Read Option QB" and scheme in the NFL - Steve Young or Randall Cunningham might have been the closest thing in the NFL, but the 49ers and Eagles schemes were not really the "read option" schemes used in college football where the QB position is often times the leading rusher on the team - will never happen in the NFL. A lot of these college QBs are very good in their combo-ability to run or throw, especially run as tO$U proved against VaTech, but as far as their ability to be a "pure QB" in the NFL where the windows are tighter and your natural ability to get a feel for what the defense is trying to do, extend plays, quick release, etc..(the "intangibles) is more important than the raw strength of your arm..., most of these "superstar" College QBs are not going to make it in the pros. tO$U had different QB's score TDs on big plays on the QB draw off the "read option" against VaTech's 6 and 7 man uber-blitz packages. The notion that tO$U has 3 QBs that could start in the NFL is ludicrous - tO$U has 3 QBs who can run the college "read option" - to heavily reliant on the "run" portion - scheme. Many of these guys are great CFB players, but they are not going to be great NFL QBs due to severe limitations in regards to their "pure QBing skills" which have as much to do with "decision-making skills" as they do with pure physical measurable such as foot speed, arm-strength, etc... Michael Vick is a good example of that - a great "decathlete", but ultimately not a great QB. As opposed to a guy like Steve Young who happened to be both an incredible multi-purpose "athlete", but was also a great "pure QB". Just because you are a great athlete is no guarantee that you are going to have the "intangibles" such as decision-making / game-management skills, etc... to be a great "pure QB". Often times great "read option" college QBs are tremendous multi-purpose athletes, but that's it....at the next level, where the defenders are faster, the windows smaller and decision-time shorter, their deficiencies at the QB position and as "pure QBs" are exposed.
