Never been, but would o if ever in London. Closest I’ve ever been to this type is Chris Costantino ‘s restaurant in SF. Forget the name and may have spelled his last name wrong. Check it out though...

If you’re into offal cuisine. There are so many other better restaurants in London than to overpay for entrails.

It’s not like this is the only place I will go. I have other very good restaurants on my list which feature normal foods, but this place is known for taking entrails and turning them into wonderful tasting dishes. I can’t get these foods at other places. Roast bone marrow and parsley salad? Lamb heart? Ox tongue? Now that’s eating! I can get Beef Wellington anywhere.

I have given this some thought

I suggest starting with the Roast Bone Marrow and Parsely Salad.
Main course should be the Ox Tongue, Beetroot and Horseradish
I would go with greens as a side, as the roughage will help with the Ox Tongue.
End the evening with Blackcurrant mousse

So, now we are on to drinks

I don't think you can go wrong with a vodka martini to start
With your main course, I think a heavier red might be in order
With dessert, I would do a light dessert wine - don't overpower the black currant

Enjoy the meal and do not send me your bill.

Had tongue at our Paris hotel a number of years back.... Wasn't bad.

Pickled tongue used to be common in delis and tastes a lot like corned beef, only leaner. But it falls somewhere in that pastrami, corned beef area, and makes a nice deli sandwich on rye with mustard. In terms of St Johns, I sort of like the selections psuro has suggested, in part because I like beet root. But the lamb heart would be an interesting choice as well. I’ve had calves brains in a restaurant before, and also sweetbreads which I think is the thymus gland, tripe (stomach?) and I enjoy liver from any animal. One of the best versions I’ve tried was fois gras topped with flaming apple brandy at a French restaurant in Marigot, St. Martin. This should be an adventure for me though.
