Don't know why, but I am gonna just knock these out this afternoon. I'm gonna take the lazy man's approach and put my favorite store bought sauce on them as opposed to making my own. They will be smoked on the Green Egg until Im satisfied. I'll use some seasoned Southern hickory chunks for that added kick. I'll be tuning in to watch Auburn vs Florida basketball today at 1430 while these little fellas are smoking. Bruce has us tied for first in the SEC currently.

In the past I have smoked a lot of elk jerky . Pounds and pounds and pounds for back packing trips . Needless to say I was a popular companion. Recently I have tried my hand at Salmon . Been good but not as ā€˜crustyā€™ as I would like . Think the problem is I try to smoke a big filet cut on two . Next time I will cut smaller strips for more surface area for more crust . Any advise here is appreciated!

Best thing I have ever smoked was a very young elk roast. I invited my friend whom was a chef at one of the top restaurants in Jackson WYO . He said it was the best meat he has ever had .

So meat lovers ā€¦.. the one decadence I give myself is making Guyanese Pepperpot . My grandmother was an indigenous person from there and I carry this recipe on from my father . Oxtails , Casareep ! , Onions . Three ingredients: keep it on the stove for a month. Casareep has an antibacterial element ā€¦ legend has it the natives would throw it in a stream hole to shock fish to harvest !! Boil it 10 minutes every day and let the meat soften and soften. Challenge is not wanting to eat it too soon. For you meat lovers šŸ»
